Lime Chocolate Smoothies
Ingredients Needed
1 (3-oz)pkg.lime gelatin
1 (8-oz.) container whipped topping
1 Cup chopped nuts
1/2 Cup chocolate pieces
1/2 Cup cookie crumbs or toasted coconut
Prepare gelatin with water as directed on package. When thickened add 1 Cup of whipped topping. Beat until smooth. Blend in remaining whipped topping. Stir in nuts and chocolate pieces. Refrigerate 15 minutes. Serve in a dish sprinkled with cookie crumbs or toasted coconut. Or when firm enough, roll into balls and roll balls in cookie or coconut mixture. Makes 16 to 18 balls.
Green Fruit Chill
Ingredients Needed
4 Cups bite-size jpear chunks or pear halves.chilled
1 Cup sweet liquid tinted with green food coloring
(pineapple juice, limeade,carbonated lime)
1 qt. lime sherbet
6 green marachino cherries
Mix fruit with liquid and chill thoroughly. Before seving, spoon fruit mixture into sherbet or parfait glasses. Top with scoop of sherbet,and maraschino cherry. Serves 6.
Irish Scones
Ingredients
2 1/2C flour
1/2 tsp salt
2 TBS butter
2 TBS sugar
2 tsp baking powder
7/8 C milk
preheat oven to 400 f
Combine all dry ingredients. Cut in butter with a pastry blender. Add milk and work into a dough. Turn onto floured board roll out and cut into eigths. Place on lightly floured baking sheet. Brush top of scone with milk and powdered sugar. Bake 15 to 20 minutes.
IRISH SODA BREAD
4 cups bread flour
1 tablespoon double-acting baking powder
1 teaspoon salt
3/4 teaspoon baking soda
1 cup raisins or dried currants, rinsed in hot water and patted dry
1 tablespoon caraway seeds
2 cups buttermilk
Into a large bowl sift together the flour, the baking powder, the salt, and the baking soda and stir in the raisins and the
caraway seeds. Add the buttermilk and stir the mixture until it forms a dough. Turn the dough out onto a well-floured
surface and knead it for 1 minute. Halve the dough, with floured hands shape each half into a round loaf, and transfer the
loaves to a lightly greased baking sheet. Cut an X 1/4 inch deep across the tops of the loaves with a sharp knife and bake
the loaves in the middle of a preheated 350°F. oven for 45 to 55 minutes, or until a tester comes out clean. Transfer the
loaves to racks and let them cool.
Makes 2 loaves.
